Trail Mix Cookie Ingredients
Dry Ingredients:
- Rolled/Quick Oats: Either option will work well for this recipe.
- Whole Wheat Flour: I prefer to use whole wheat flour but if you prefer to use unbleached or another type of flour that will work also.
- Sunflower Seeds: Use raw unsalted
- Pumpkin Seeds: Use raw unsalted
- Flax Seeds: I used milled flax seeds for easier digestion compared to whole flax seeds. Either would work though.
- Hemp Seeds: shelled hemp seeds are my go-to. They are a great addition full of protein.
- Cinnamon
- Sea Salt
- Dark chocolate chips: I prefer dark chocolate for almost all my baking. Milk or another kind would work also.
- Raisins: Thomas raisins are the normal ones I use, again a different raisin would also work.
Wet Ingredients:
- Molasses: fancy molasses for baking.
- Olive Oil or Coconut Oil: I use olive oil in recipes, but I also enjoy the flavour of coconut oil so that would work as well. Whichever taste you prefer.
- Milk: I use almond milk but any other kind will work.
- Maple Syrup: Try to use pure maple syrup because it has more nutrients compared to regular table syrup.
- Pure Honey: Also try to use pure organic honey because it has more nutrients and vitamins compared to regular honey which can be full of additives.
How To Make Trail Cookies
- First, you’ll preheat your oven to 350 degrees F.
- Next line your baking sheet(s) with parchment paper or oil them with your choice of oil.
- While the oven is preheating, in a large mixing bowl add 2 ¼ cups rolled oats, 2 cups whole wheat flour, 1 cup sunflower seeds, ¾ cup pumpkin seeds, ¼ flax seeds, ¼ hemp seeds, 1 tablespoon cinnamon, 1 tsp sea salt, ¾ cup chocolate chips, ¾ cup raisins.
- Mix everything with a mixing spoon until well combined.
- Take your liquid measuring cup and add the ¼ cup molasses, 1/2 cup oil (olive or coconut), 1 cup milk, 3 tablespoons honey, and 3 tablespoons maple syrup.
- Whisk all liquid ingredients together.
- Next, you’re going to pour the wet ingredients into the bowl of the dry ingredients and mix until everything is well combined.
- Now with your cookie scoop, place each cookie about 1 – 1 ½ inches apart on the baking sheet.
- Next, take your fork and gently press down on the top of each cookie to flatten them a little. Don’t press too firmly, just a bit so each cookie is about ½ – ¾ inch thick and not shaped so much like a ball.
- Bake in the oven for 25 minutes or until golden brown.
- Take out of the oven and place on a cooling tray.
- Allow to cool for 5 minutes before enjoying these wonderful trail mix cookies!

- 3 Tbsp Honey
- 3 Tbsp Maple Syrup
Instructions
- Preheat oven to 350 degrees F.
- Line baking sheet with partchment paper or spray with oil.
- In a large mixing bowl, add 2 1/4 cups oats, 2 cups flour, 1 cup sunflower seeds, 3/4 cup pumpkin seeds, 1/4 flax seeds, 1/4 hemp seeds, 1 tbsp cinnamon, 1 tsp sea salt, 3/4 chocolate chips, and 3/4 cup raisins. Mix together until combined.
- In the liquid measuring cup add 1/4 molasses, 1/2 olive oil, 1 cup milk, 3 tbsp honey and 3 tbsp maple syrup and whisk until combined.
- Pour wet ingredents into the dry ingredients and stir together.
- Using the cookie scoop or spoon, scoop out about 1 tablespoon of cookie mix and place onto baking sheet. Space out each cookie about 1 1-2 inches apart.
- With your fork gently press down on the top of the cookie to flatten into a circle.
- Bake in oven for 25 minutes or until trail mix cookies are golden brown.
- Allow cookies to cool for 5 minutes before enjoying!
Trail Mix Cookies Recipe Notes
- Try to mix your liquid ingredients separately and do not pour each wet ingredient into the dry mix one by one. Molasses is thick and will be a little harder to mix with all the dry ingredients if it’s not blended with the other wet ingredients.
- The spaces on the baking sheets don’t have to be very far apart because these cookies don’t expand or rise much.
- If you forget to flatten the cookies with a fork it is alright, they might just need a couple extra minutes baking. I press them down because they don’t expand or flatten on their own.
How to Store Cookies
These cookies will last 3-4 days on the counter covered.
However, for longer storage put them in an airtight container in the refrigerator. I’ve kept mine for 2 weeks and they were still delicious.
You could even freeze them if you want to keep some for a later day.
